RECIPE: Honey Cake

- 4 eggs
- 1/2 cup shortening
- 1 lemon (juice and rind)
-1 orange (juice and rind)
- 5 cups flour
- 1 teaspoon soda
- 3 teaspoons baking powder
- 1/2 teaspoon cinnamon
- 1/2 teaspoon ginger
- 1/2 teaspoon cloves
- 1/2 teaspoon nutmeg

BRING TO A BOIL AND COOL:
- 1 cup strong, black coffee
- 1 cup honey
- 1 cup brown sugar
- 1 cup granulated sugar
- 1 cup chopped nuts (optional)

Beat eggs well, add melted and cooled shortening or oil, add fruit rind and juices. Add presifted dry ingredients alternately with coffee-honey mixture. Bake in a 9X12 inch loaf pan in a moderate oven (350 degrees) about 1 1/4 hours.
